3:30PM - Heritage Ciders
Presented by: Gidon Coll of Original Sin Cider
The United States Association of Cider Makers recently established a Cider Style Guide defining "heritage cider" made from multi-use or cider-specific bittersweet/bittersharp apples, heirloom varieties (with wild or crab apples sometimes used for acidity/tannin balance). These ciders are generally higher in tannins than "modern ciders" and include cider produced in the West Country of England (Somerset and Herefordshire), Northern France (Normandy and Brittany), and Northern Spain (Basque and Asturias), as well as New World ciders and others in which cider-specific apple varieties and production techniques are used. In this seminar, learn about the aroma, appearance, and apple varieties used to make heritage ciders. Plus, Original Sin Founder, Gidon Coll, will walk you through a heritage cider tasting with ciders made from heirloom apples including a tasting of a special reserve cider made from his Hudson Valley, New York-based orchard.
About Gidon Coll:
Gidon Coll is the Founder/President of Original Sin Cider. Established in 1996, Original Sin is one of the pioneers of the modern day cider revival. Today the product is distributed in 30 states, the United Kingdom, Japan and Hong Kong. In 2012, Coll set-up a small orchard on his family's old dairy farm. The orchard features over 150 varieties of apples in Upstate New York.

Learn how simple and fast it is to make tasty ciders at home. Mary will cover the basics of cider making, from selecting juice and yeast, to adding complexity with herbs, spices, hops and the like. Anyone can make delicious ciders at home with Mary's techniques, regardless of how little space or time you have.
